Can I double the recipe for blender hollandaise sauce without harming her? Or do I do it twice?
Hollandaise is one of those things that to double is not good. Trying to do too much at once, you do not get hot enough to get it right. Unless, of course, your recipe is a little to begin with. I usually do my whisk by hand. I would say maybe 4-5 egg yolk is the largest batch I would try.
