Blender Hollandaise Sauce Recipe

Hollandaise sauce has been a sauce used by the French for approximately four centuries. The first reference to this sauce or one very similar appeared in a cookbook that was published in 1651 and seems to have remained popular every since. This creamy and smooth pale yellow sauce is an emulsion of egg yolk and butter that is usually seasoned with lemon and salt and sometimes with white or cayenne pepper or paprika. It has a rich buttery flavor with a very mild tang that makes it a perfect sauce for many dishes as it allows the taste of other food to come through.
Hollandaise sauce is one of the 5 sauces in the French haute Cusine mother sauce repertoire. The other four sauces are Bechamel, Veloute, Espagnole and Tomato. Because of it’s light coloring and wonderful flavor hollandaise sauce lends itself well to a variety of foods the most well known of which is Eggs Benedict a breakfast food consisting of an English muffin, bacon or ham, and poached egg topped with this sauce. It is claimed that eggs benedict was used to cure hangovers but, the story is more legend than fact.
However, Eggs Benedict isn’t the only dish that is prepared with this wonderful sauce. It is often served over such vegetables as asparagus and Brussels spouts And even on steamed baby carrots. Not only does it add taste to these vegetables but, also adds a more formal look making it a favorite in many high class restaurants.
Many fish dishes are also served with hollandaise sauce as well. Poached salmon is often served with hollandaise sauce and a bit of dill and it is sometimes served over cod as well.
Inventive cooks seem to be finding a number of other uses for it as well. This sauce is now being used in different bean dishes and pasta dishes especially pasta dishes that are made with ham. It is also used in a variety of other dishes as well.
Making hollandaise sauce from scratch takes a certain amount of skill and constant stirring. One has to be careful that egg does not separate or become hard and the sauce should be served warm not hot.
Although this sauce originated in France almost every country in the world uses some version or another of this sauce to make one or more dishes possibly because it is so versatile that it can be used with just about every type of food imaginable. Of course in many countries the basic recipe is changed and a variety of spices are added to taste which can easily be done since this sauce is so basic and has no overpowering taste of it’s own. It is probably the easiest sauce to experiment with for those cooks who like trying new recipes.
Considering that hollandaise sauce is almost 400 years old one can certainly claim this sauce has stood the test of time and is being used to create more wonderful and tasty dishes than ever before.
