Pumpkin BAGEL Recipe?
I’m looking for one that doesn’t use a bread machine (I have one, but I have NO idea how to use it. lol!).
Links or regular recipes are okay to give.
Pumpkin Bagels
12 oz Granulated sugar
2.5 oz Salt
1 lb Egg fluid, pasterized
12 oz Vegetable oil
1 lb Water
3 lb Libby’s® Pumpkin
3 oz Yeast, powdered
1 lb Water warm
11 lb Plain flour high gluten
3 tbsp Cinnamon, ground
1 tsp Cloves, ground
1 tsp Ginger, dried powdered
In a mixer bowl, combine sugar, salt, eggs, oil, water and Pumpkin on low speed for 2-3 minutes or until well mixed.
In a separate bowl, dissolve yeast in warm water. Set aside.
Sift flour, cinnamon, cloves and ginger. Add to pumpkin mixture. Mix on low speed until crumbly.
Slowly add liquid yeast. Mix on low speed 3-4 minutes until well mixed and dough is very smooth.
Remove dough from mixer. Place in a greased bowl, cover lightly and let rise in warm place for 1 hour.
Punch dough down and knead 2 minutes until smooth. Measure dough into 3 oz. portions.
Roll each piece to form a strand about 6 inches long and 3/4 inch in diameter. Moisten ends and seal together firmly to make doughnut shaped rolls of uniform thickness.
Let rise on greased sheet pan 15 minutes.
TO COOK
In a wide pot, dissolve 4 Tbsp. sugar in 1 gal. of boiling water.
Drop bagels into water, one at a time. Boil for 3 minutes, turning after 1-1/2 minutes.
Remove with slotted spoon and place on greased sheet pans.
Bake in a 425°F conventional oven for 18-22 minutes.
*this recipe serves a lot of peope…96 to be exact,to make a few bagels you would have to scale down the ingredients.
